Serve your customers this delicious mixed vegetable recipe, which goes by the name of Avial. Aromatic veggies are cooked in coconut oil to bring out unmatched flavours that will tantalise your taste buds. They are then drowned in thick and creamy coconut milk, prepared with MAGGI® coconut milk powder. Finish with fried curry leaves on top.

How to Make Aviyal

Prepare Aviyal

  • Step 1

    Boil all the vegetables in hot water with a pinch of turmeric.

  • Step 2

    Make a paste with soaked rice, green chilies, and cumin seeds. Add MAGGI® coconut milk powder in the paste.

  • Step 3

    In a pan, take coconut oil, add curry leaves and add all the boiled vegetables, except brinjal. Add a pinch of asafetida.

  • Step 4

    Add the paste from step 2 with one cup of water. Cook for 8-10 mins.

  • Step 5

    Add yoghurt and cook for another 2-3 minutes.

  • Serving Suggestions:

    Finish with fried curry leaves (fried in coconut oil).
