Ilish Paturi

Make way for Ilish Paturi, a delicacy that combines three of Bengal's greatest loves—the hilsa fish, the banana plant, and mustard. Hilsa fish is coated with a special spice mix that also contains MAGGI® coconut milk powder, before being laid on a banana leaf and steamed. This recipe, even though it looks complex, requires simple ingredients and no special technique.

  • MAGGI® coconut milk powder (thick -add water to reach the desired consistency of coconut milk)
    100 ml
  • Hilsa fish
    300g (whole thick roundels sliced)
  • Mustard seed paste
    3 tbsp (soaked)
  • Poppy seed paste
    2 tbsp (soaked)
  • Green chilli paste
    4 nos
  • Turmeric powder
    1 ½ tsp
  • Mustard oil
    4 tbsp
  • Salt
    To taste
  • Sugar
    pinch
  • Banana leaf
    poached in hot water
How to Make Ilish Paturi

Prepare Ilish Paturi

  • Step 1

    Wash and dry the fish slice.

  • Step 2

    In a bowl, take poppy seed paste, mustard paste, green chilli paste, turmeric powder, coconut milk, mustard oil, salt, and sugar. Mix well.

  • Step 3

    Marinade the fish slice in the mixture for about 3-4 hours.

  • Step 4

    Take a piece of banana leaf, put a piece of marinated fish on centre of the leaf, and 2 spoons of the marinated mixture, wrap it & tie with thread. Finish all the pieces in the same way.

  • Step 5

    Steam in a steamer for 25-30 minutes.

  • Serving Suggestions:

    Unwrap the banana leaf and serve hot.
