Kottu

One of the national dishes of Sri Lanka, Kottu is a favourite among all age groups. Ridge gourd is shortly fried in a mix of spices to bring out its intense flavour. These are then combined with pulpy tomato and coconut cream (made with MAGGI® coconut milk powder) for an unmatched taste. Each kottu is prepared individually on a hot griddle.

  • MAGGI® coconut milk powder (Add water to reach the desired consistency of coconut cream)
    450 ml
  • Ridge gourd
    2
  • Chopped tomato
    2
  • Chopped onion
    1
  • Green chilli

  • Dry red chillies

  • Oil
    2 tbsp
  • Curry leaves, mustard seeds, urad dal, cumin seeds
    As required
  • Salt
    To taste
How to Make Kottu

Prepare Kottu

  • Step 1

    Wash, peel, and cut the ridge gourd into small pieces.

  • Step 2

    Take a pan, add curry leaves, mustard seeds, dry red chillies, cumin seeds, and urad dal.

  • Step 3

    After it starts to crackle, add slit green chillies & chopped onion. Fry for 3-4 minutes.

  • Step 4

    Add chopped tomato, cook for another 5-6 minutes in slow flame, until tomato become pulpy.

  • Step 5

    Add cut ridge gourd. Mix well.

  • Step 6

    Add 200 ml water and salt (as per taste). Cook for another 5-6 minutes.

  • Step 7

    Once the vegetables become soft, add coconut cream.

  • Serving Suggestions:

    Garnish with curry leaves and serve with rice, idiyappam, roti or idly.
